The recipe is simple. You just mix everything together, scoop and bake. Sam loves helping. They also freeze really well, so I scoop a bunch and set them close together on a cookie sheet, freeze them, then dump into a bag and bake a few at a time. Sam likes to get them out and set them on a cookie sheet himself; it seems very grown up:)
BREAKFAST COOKIES
3 mashed bananas
1/3 cup jam (I use homemade apricot, which only has a tiny bit of honey, you could also use applesauce, or more mashed fruit.)
2 cups rolled oats
1/4 cup coconut milk
1/2 cup raisins
1/3 cup almonds, soaked and chopped (Soaking isn't totally necessary, but it makes them healthier, and easier for little teeth to chomp.)
1/3 cup sunflower seeds (We soak these too.)
1 tsp vanilla
1 TBSP cinnamon
1 TBSP sucanat or honey
Bake at 350 for fifteen minutes, until the edges are a bit browned but the cookie is still soft.
You can also swap out most of the ingredients for similar items in your cupboards: different dried fruits, rolled grains, sweeteners, milk, jam etc. Experiment and see what you come up with! And if it's yummy, share it here; I'll want to try it:)
