There have been three bananas sitting in the fruit bowl, defiantly turning browner and browner. Finally they were fit only for the compost pile, or that ingenious alchemist's trick; banana bread. The sticky, gooey sweetness of bananas past their prime is turned into something wholly delectable and completely unlike the fruit-fly attracting, counter-top eye-sore it's based on.
I searched for and found a whole wheat recipe that I'm crazy about. I didn't save the link(shame on me!), but I did save a copy of the recipe and will happily share it:
- 1/3 cup vegetable oil
- 1/2 cup honey
- 1 teaspoon vanilla
- 2 eggs
- 1 cup mashed bananas (about 3)
- 1 3/4 cups whole wheat flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/4 cup hot water (mix the baking soda into this)
- 1/2 cup chopped walnuts
55 minutes @ 325 and you have the yummiest, healthiest banana bread! I bet you could even throw in a little ground flax seed if you wanted to be really healthy...
